So, how do people feel about zombies retaining some aspect of their humanity after being turned? Could this potentially be an avenue to explore a zombie tragedy genre?

Depends of what is a zombie to you.
The original zombie was much different to the today movie zombies, maybe return it to magic and voodoo could do the thing (someone who got it's memory erased and mind blurred to become a slave) and them some memory fragments would come and the zombie would try to search who he was.
